How to Make Green Eggs for St. Patrick's Day

How amazing would some bright green eggs be for a festive St. Patrick’s Day breakfast? These broccoli scrambled eggs are the perfect way to start the celebration, and are so incredible quick to make!


Eggs are a great source of protein and by adding some veggies to the child-friendly scrambled egg, you create a beautiful deconstructed omelette (fancy, right?). This breakfast has so many positives: it can be prepared in about 5 minutes, it is very healthy, it is low in calories but extremely satisfying, and keeps you nourished all morning. I’m sure all the mamas out there can relate toe the dreaded “I’m hungry” whine, about 5 minutes after you’ve finished a meal. That won’t happen with this dish.


So how do we turn those eggs green? I used one scoop of greens powder, mixed in with my eggs. Combining greens powders with other foods is fun, super-easy and ensures you and your family will get a mix of plant-based nutrients for vibrant health. Green Scrambled Eggs + Broccoli

makes two servings


Ingredients:

  • 4 large eggs

  • 1 scoop greens powder (recommend BeWell Superfood Greens)

  • 8-10 broccoli florets

  • 1 tablespoon of olive oil

  • sea salt + pepper to taste


Instructions:

  1. Place 3/4 to 1 inch of water in a saucepan with a steamer and bring to a boil. (Note that if you don't have a steamer, you can simply put the broccoli directly into an inch of boiling water.)

  2. Once boiling, add the broccoli and steam for 5 to 7 minutes.

  3. While the broccoli is steaming, crack the eggs into a bowl and gently mix with a fork (don't whisk). Add the greens, and stir to combine.

  4. In a skillet, heat the olive oil on medium-high heat.

  5. Add the eggs and stir continuously with a rubber spatula.

  6. After about 30 seconds, take the skillet off of the heat for about 10-15 seconds while continuously stirring the eggs.

  7. Repeat the "30 second on, 15 second off" cooking, for approximately 3 minutes.

  8. Plate the eggs, add the steamed broccoli, and season with salt and pepper to your liking.
